Ingredients

  • 1/2 cup egg substitute, or egg whites
  • 1 cup pure pumpkin
  • 1 jar of baby food pureed prunes
  • 2/3 cup NuNaturals NuStevia Sweetenerâ„¢ Baking Blend, or their MoreFiberâ„¢ Baking Blend
  • 1/2 cup whole wheat white flour
  • 1/2 cup wheat bran
  • 1/2 cup soy protein powder
  • 1/2 cup soy flour
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ginger
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1/4 teaspoon salt
  • Raisins (optional)
  • Nuts (optional)

Instructions

  1. Preheat oven to 300 degrees F.
     
  2. Mix the egg substitute, pumpkin, NuStevia™ Baking Blend, and prunes well.
     
  3. Add in the rest of the ingredients and mix until combined.
     
  4. Drop by rounded spoonfuls on to an ungreased cookie sheet. Use the back of a fork to flatten the cookies.
     
  5. Bake for 20 minutes.
