Hokey Pokey Cookies

These Hokey Pokey Cookies were (you guessed it) what it was all about! After all, when a healthy baking idea has only 6 ingredients where many of which you might already on hand, you will want to get up and dance with joy too.

Cooking Time: 20 min

Ingredients
  • 2/3 cup margarine, or the butter substitute of your choice
  • 10 packets of stevia
  • 1 tablespoon honey
  • 1 teaspoon baking soda
  • 1 tablespoon skim milk
  • 1 3/4 cups whole wheat flour
Instructions
  1. Place margarine, stevia and honey in a large saucepan. Heat, stirring all the time until everything is dissolved and well integrated.
     
  2. Almost bring to the boil. Remove from heat and allow to cool slightly.
     
  3. Dissolve baking soda in skim milk and add to margarine mixture. Add flour and mix well.
     
  4. Roll tablespoons full into balls and place on greased baking trays. Flatten slightly with a fork.
     
  5. Bake at 355 degrees F for about 15 to 20 minutes or until golden.
Notes

This cookies recipe should yield about 24 cookies.
