Romantic Chocolate Cake

Impress that special someone in your life with this easy chocolate cake recipe. Best of all, this is one of the best chocolate cake recipes because it's guilt-free yet full of flavor.

Cooking Time: 35 min

Ingredients
  • 1 3/4 cups white whole wheat or all-purpose flour, unsifted
  • 1 teaspoon baking soda
  • 4 tablespoons powdered buttermilk
  • 9 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla
  • 1 1/2 cups sugar substitute suitable for baking
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon allspice
  • 1/2 cup plus 3 tablespoons fat free mayonnaise or margarine
  • 2 eggs, or 4 egg whites
  • 1 cup fat free sour cream
Instructions
  1. Preheat oven to 350 degrees F. Grease and flour two or three 8-inch layer pans or 1 9x12x2 cake pan.
     
  2. Mix all dry ingredients together.
     
  3. Blend in mayonnaise, eggs, vanilla and 1/2 of sour cream. Beat two minutes at medium speed with mixer or 300 strokes by hand.
     
  4. Add remaining sour cream and beat 2 minutes longer. Pour into pans.
     
  5. Bake 25 to 35 minutes until toothpick comes out clean.
     
  6. Cool on rack a few minutes before removing from pan. When completely cool, frost cake.

Frosting

  • 8 ounces reduced fat cream cheese
  • 1 stick margarine
  • 1 box confectioners sugar substitute
  • A dash or two of cinnamon (optional)
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla
  1. Cream margarine and cream cheese together until fluffy, gradually add dry ingredients one at a time until all are well blended.
     
  2. Add vanilla and blend well.
