Quick and Easy Chocolate Cake

This is one of the best chocolate cake recipes around because anyone can make this recipe. Even those with no baking experience cam learn how to make a chocolate cake with this recipe.

Cooking Time: 40 min

Ingredients
  • 1 cup butter substitute suitable for baking
  • 1/4 cup unsweetened cocoa
  • 6 tablespoons hot water
  • 1 cup sugar substitute suitable for baking
  • 1 teaspoon baking powder plus 3/4 cup flour, white whole wheat or all-purpose
  • 2 eggs, separated
Instructions
  1. Spray the sides of a 8-inch pan with cooking spray and line the bottom with greaseproof paper.
     
  2. Heat butter substitute, cocoa and water in a medium saucepan to melt the butter substitute. Stir to combine then add sugar substitute and mix well.
     
  3. Add flour and stir in gently, then mix in the egg yolks.
     
  4. Beat egg whites to a stiff foam then fold into the chocolate mixture. Pour the batter into prepared tin.
     
  5. Bake at 350 degrees F for 40 minutes or until cooked when tested with skewer.
     
  6. Turn out onto wire rack to cool. Ice with chocolate icing if desired.
Notes

This cake can be turned into an Upside Down cake or pudding by melting 3 1/2 tablespoons butter substitute with 1/2 cup firmly packed brown sugar and spreading into the greased tin. Arrange pears or pineapple on top then pour over the cake batter. To serve turn onto serving plate so the fruit is on top.
