Slow Cooker Chicken Chili

If you are craving a basic slow cooker chili recipe that is great for you, then try this Slow Cooker Chicken Chili from Kris Schoels. The creator of this easy chili recipe writes the lifestyle blog Young Married Chic. Easy chicken recipes, like this dish, are just what you need when your stomach is growling.

Cooking Time: 6 hr 30 min

Ingredients
  • 1 red onion, chopped
  • 1 can (16 ounces) black beans
  • 1 can (8 ounces) tomato sauce
  • 10 ounces (1 package) frozen corn kernels
  • 2 cans (14.5 ounces) diced tomatoes w/chilies (check the spice level- I used mild)
  • 1 packet taco seasoning
  • 1 tablespoon chili powder
  • Salt and black pepper, to taste
  • 4 or 5 boneless skinless chicken breasts
Instructions
  1. Combine beans, onion, tomatoes, corn, tomato sauce, chili powder, and taco seasoning in your slow cooker. Place chicken on top and cover with a thin layer of the sauce and beans.
     
  2. Cook on high for 6 hours.
     
  3. About 30 minutes before serving, remove chicken and shred in a separate bowl. Place shredded chicken into the slow cooker and stir in to combine with everything else.
     
  4. Cover and place slow cooker on "warm" setting for 30 minutes to allow chicken to soak in the chili flavor
Notes

This chili makes a lot, so freeze it in 1 cup servings to be enjoyed for later. Serve over brown rice, steamed broccoli, with chips, or on tortillas.
