Seitan Three Bean Chili

Seitan Three Bean Chili

One of the best parts about this Seitan Three Bean Chili recipe from Jessica @ Dishin' About Nutrition is that it shows you how to make a delicious easy chili recipe without using meat or cheese. Do yourself a favor and try this vegetarian chili dish.

Ingredients
  • 1 can kidney beans, rinsed and drained
  • 1/2 can pinto beans, rinsed and drained
  • 1/2 can black beans, rinsed and drained
  • 1/2 cup water
  • 3 tablespoons olive oil
  • 8 ounces vegan seitan, finely diced
  • 15 ounces canned tomato sauce
  • 2 Roma tomatoes, diced
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 4 medium sized carrots, diced
  • 1 jalapeno pepper, finely chopped
  • 1 medium onion, diced
  • 3 cloves garlic, finely chopped
  • 1 tablespoon cumin
  • 1 teaspoon chili powder
  • 1 1/2 teaspoons pure maple syrup
  • Salt and pepper
Instructions
  1. Lightly brown the seitan in a separate pan.
     
  2. Saute bell peppers and carrots for about 10 minutes, then add the onions. Continue cooking until the onions become a translucent gold color.
     
  3. Add garlic and jalapenos, and cook 1 to 2 minutes.
     
  4. Combine lightly browned seitan and remaining ingredients into pot. Cover and simmer for at least 30 minutes.
