Mystery Chili

The big secret behind this Mystery Chili recipe? It's ground turkey! Chock full of delicious and hearty flavors, this is truly one of the tastiest low fat recipes using ground turkey.

Serves: 8

Cooking Time: 40 min

Ingredients
  • 1 pound fresh carrots
  • 1 pound fresh zucchini
  • 1 pound onions
  • 1/4 cup light vegetable oil
  • 3 pounds lean ground turkey
  • 1 tablespoon garlic, minced
  • 4 28-ounce cans crushed tomatoes in puree
  • 1 15-ounce can tomato sauce
  • 2 teaspoons salt
  • 38 ounces kidney beans
  • 2 tablespoons chili powder, or more to taste
Instructions
  1. In your food processor, chop the carrots, onions and zucchini.
     
  2. Heat the light vegetable oil in a 6 quart pot, and then add vegetables. Cook over medium-high heat 15 to 20 minutes, stirring three or four times until almost tender.
     
  3. Place the ground turkey and garlic in an 8 quart pot. Cook the turkey , breaking it up, until it's no longer pink.
     
  4. Stir in the vegetables, crushed tomatoes tomato sauce and salt. Bring to a boil; reduce heat to medium-low.
     
  5. Simmer 15 to 20 minutes for flavors to develop. You should have roughly 22 cups of meat sauce. You can use the sauce as is for spaghetti sauce or freeze some for future chili.
     
  6. With 7 cups of the meat sauce, add the kidney beans and the chili powder. Top with shredded cheese and onions, if desired.
Notes

Refrigerate up to 5 days. Freeze up to 4 months.
