Not-Quite-Traditional Amish Style Chicken Pot Pie

Authentic Amish recipes usually will include ingredients like butter and full fat milk. This Not-Quite-Traditional Amish Style Chicken Pot Pie recipe uses some clever substitutions to make a chicken pot pie recipe you don't have to feel bad about eating. Don't worry, as this still has the flavor you'd expect from Amish cooking. Think of this recipe as less like a classic pot pie and more like a unique take on chicken and dumplings.

Ingredients
  • 1 1/2 cups whole wheat flour
  • 1 egg
  • 1/2 onion, chopped
  • 3/4 cup peas
  • 3/4 cup skim milk
  • 1 teaspoon salt
  • 3 cups low sodium chicken broth (or enough to cover chicken in pot)
  • 3 cups skinless chicken breasts, cooked and cubed
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1/2 teaspoon parsley
  • 1/2 teaspoon black pepper
Instructions
  1. Add in chicken cubes, carrots, celery, onions and peas to a 5-quart soup pot.
     
  2. Cover chicken and vegetables with chicken broth. Add in your parsley, salt and black pepper to taste.
     
  3. Simmer over a  med-low heat until vegetables are tender.
     
  4. While the soup is cooking, start making your noodles. To make the noodles, first thoroughly combine the egg, remaining salt, skim milk and whole wheat flour. If dough is too sticky just add a little more flour.
     
  5. Roll dough out on flour covered area to about 1/4-inch to 1/8-inch thick. Cut dough into 1 1/2-inch squares to make your noodles.
     
  6. Slowly put squares into the already-made soup mixture and cook for 10 minutes on medium heat, until noodles are done. Be sure to serve this warm.
