Healthy Burmese Chicken Curry

This healthy dish was inspired by Burmese chicken curry recipes. You'll love this easy curry chicken recipe because it's not your average curry! If you're looking to try something a little different, then give this recipe a go. We think you'll be pleased.

Cooking Time: 45 min

Ingredients
  • 2 pounds skiness chicken breast
  • 2 large onions, roughly chopped
  • 3 large cloves garlic, peeled
  • 5 small pieces ginger, peeled
  • 2 tablespoons peanut oil
  • 1/2 teaspoon shrimp paste or 3 tablespoons fish sauce
  • 1 teaspoon salt
  • 2 cups canned coconut milk
  • 1 teaspoon chilli powder (optional)
Instructions
  1. Wash the chicken and dry .
     
  2. Place onion, garlic and ginger in a food processor and blend until smooth, adding a little water if necessary.
     
  3. Heat the oil in a pan and add the onion mixture.
     
  4. Add the shrimp paste or fish sauce and cook over a high heat for five minutes, stirring.
     
  5. Add skinless chicken and cook over a medium heat until brown on both sides.
     
  6. Add the coconut milk, chili powder and salt.
     
  7. Bring to the boil and simmer, covered, for 30 minutes, stirring occasionally.
     
  8. Remove cover and cook for 15 minutes or until chicken is tender.
     
  9. Serve over noodles or rice.
