Chicken Comfort

Chock full of hearty ingredients, this recipe for Chicken Comfort from Katy Gillis of Gillis Fitness Consulting will leave you satisfied. This healthy chicken recipe makes things easy for you with both stove top and slow cooker healthy cooking directions. The ingredients list for this healthy eating idea may seem long, but this chicken dinner could not be any simpler to make.

Ingredients
  • 1 can chickpeas, drained
  • 1 package boneless skinless chicken breast, cut into bite-size pieces
  • 4 carrots, sliced
  • 3 red potatoes, diced but not peeled
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 can (14 ounces) diced tomatoes
  • 1/2 cup celery, sliced
  • 1 cup peas, fresh or frozen
  • 2 cups broccoli florets, fresh or frozen
  • 6 garlic cloves, diced
  • 4 cups all-natural chicken broth
  • 2 cups water
  • 1 1/2 cups brown rice
  • 2 cups baby spinach, chopped
  • 2 teaspoons thyme
  • 2 teaspoons black pepper
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon red pepper
Instructions
  1. In a saucepan, cook the chicken, onions, peppers, and garlic in hot olive oil for 3 minutes on high heat.
     
  2. Add remaining ingredients to the pot and cook, covered, on medium-high heat for 30 to 40 minutes or until rice is cooked and tender.

Slow Cooker Directions: Follow steps 1 and 2, and then place ingredients in slow cooker. Cook on Low setting 6 hours, or High setting 3 hours.
