Turkey and Penne Casserole

Award winning casserole recipes can be good for you, as this simple casserole shows. Whole wheat pasta and lean turkey add nutritional value to this quick easy casserole recipe.

Serves: 4

Ingredients
  • 1 cup whole wheat penne pasta
  • 2 onions, chopped
  • 4 stalks celery, sliced
  • 1 red pepper, chopped
  • 2 1/2 tablespoons butter substitute
  • 1 pound ground turkey
  • 1 can condensed mushroom soup
  • 1 can water
  • Salt and pepper
  • 1/2 teaspoon marjoram
  • 2 tablespoons parsley, chopped
Instructions
  1. Cook the pasta in salted water until just tender.
     
  2. Saute the onions, celery and pepper in the butter or margarine for about 5 minutes. Add the turkey and cook for another 5 minutes.
     
  3. Mix in the soup, water, salt and pepper to taste, marjoram and parsley.
     
  4. Put the cooked pasta in the bottom of a greased casserole dish. Cover with turkey mixture. Cover and cook in a 350 degree F oven for about 1 hour.
