Hobo Hubby Casserole

Even if your hubby is a hobo, he can make this hobo dinner recipe from whatever is left in the refrigerator. Tex-Mex and Italian traditions collide in easy casserole recipes for dinner like this Hobo Hubby Casserole. But don't worry: budget casserole recipes like this can be made into healthy dinner recipes too!

Ingredients
  • 1 pound lean ground turkey or chicken
  • garlic to taste
  • 1 teaspoon salt
  • 1 teaspoon sugar or Splenda
  • 2 cans (8-ounces) tomato sauce
  • 8 ounces egg noodles
  • 8 ounces fat free sour cream
  • 8 ounces low fat cream cheese
  • 1 1/2 cups part skim Cheddar cheese, shredded
Instructions
  1. Preheat oven to 350 degrees F.
     
  2. Brown the ground turkey or chicken and drain the fat.
     
  3. Combine the meat with garlic, salt, sugar/sweetener in a saucepan, and toss with tomato sauce until evenly coated.
     
  4. Cover and simmer 15 minutes.
     
  5. Prepare egg noodles according to package directions and drain.
     
  6. Soften cream cheese in the microwave bu 30-second increments.
     
  7. In a small bowl, stir low-fat sour cream and softened low fat cream cheese with a wire whisk until evenly combined.
     
  8. Layer noodles, sour cream mixture and meat mixture.
     
  9. Repeat layers and sprinkle low fat cheddar cheese on top.
     
  10. Bake for 20 minutes or until cheese is melted and lightly browned.
