Healthier Tater Tot Casserole

By using lean ground meat, fat free soup and reduced fat cheese, Kim of Mo'Betta takes one of the best casserole recipes with ground beef and makes it fit for your healthy eating lifestyle. This Healthier Tater Tot Casserole recipe is a kid favorite that will surely become one of your new favorite healthy casserole recipes.

Ingredients
  • 1 1/2 pounds lean ground beef (90/10) or ground turkey
  • 1/2 medium onion, chopped
  • 1 to 2 garlic cloves, minced
  • 1 can fat free cream of chicken soup
  • 2 cups 2 percent cheddar cheese, shredded (or favorite combo of cheeses)
  • 1/2 cup skim milk
  • 4 tablespoons plain yogurt
  • 1 bag frozen tater tots (the smaller round ones, like Ore-Ida Crispy Crowns work well with this)
  • Salt and black pepper, to taste
Instructions
  1. Preheat oven to 350 degrees F. Grease a 9x13 inch baking dish.
     
  2. In a large skillet, cook ground beef (or turkey), onions and garlic until meat is no longer pink. (If needed, drain excess grease. This will depend on how lean the meat was.) Set aside.
     
  3. In a medium bowl, mix together the soup, milk and yogurt until smooth. Add meat mixture and 1 cup cheese. Stir to combine.
     
  4. Layer half of the tater tots on the bottom of the greased baking dish. Pour the meat/cheese mixture over the top. Place the other half of the tater tots on top of the meat.
     
  5. Sprinkle remaining cheese on top and bake uncovered for 25 to 30 minutes, or until golden brown and bubbly!
