Dollar Store Casserole

It may surprise you to learn that every single ingredient used in this recipe for Dollar Store Casserole was actually purchased at a dollar store. For healthy and low cost cooking, get your ingredients at your local dollar store.

Serves: 4

Cooking Time: 1 hr 5 min

Ingredients
  • 14 ounces frozen cut corn, fully thawed
  • 12 ounces frozen sweet potato fries
  • 10 ounces frozen cut leaf spinach, fully thawed
  • 1 can pumpkin, about 1 1/2 cups
  • 1 can black beans, thoroughly rinsed and drained (about 2 cups)
  • 2 teaspoons hot sauce, or more to taste (optional)
  • 3 teaspoons chili powder
  • 4 teaspoons salt-free seasoning mix
  • 1 1/2 cups soymilk
  • Garlic powder, to taste
  • Salt, to taste
  • 8 tortillas
Instructions
  1. Place the thawed corn and sweet potato fries on a baking sheet. Roast in a pre-heated 425 degree F oven for about 45 minutes, or until both vegetables are crispy. This step is technically optional, but it makes a huge difference in the final dish in terms of flavor.
     
  2. While the vegetables are roasting, place a saucepan over medium heat. Then, add in your pumpkin, hot sauce, chili powder, salt free seasoning, garlic powder, salt and soy milk. Stir together, and then wait until the mixture is thoroughly combined. Leave yourself about 5 to 10 minutes for this. Turn off the heat and set aside.
     
  3. Once the vegetables are done roasting, combine them with the fully thawed spinach and black beans in a large bowl. Lower the oven's temperature to 375 degrees F.
     
  4. Pour about a third to half of the pumpkin sauce on the bottom of a casserole dish. Then, take about one to three tablespoons of the vegetable mixture and place in one of the tortillas. Roll the tortilla around ther mixture until it takes on a log-like shape. Place the tortilla roll-up into the casserole dish. Repeat until all of the tortillas and the vegetable mixture have been used up.
     
  5. Pour the remaining pumpkin sauce over top of the casserole and spread to coat evenly. Bake the casserole dish in a 375 degree F oven until everything is completely warmed through, about 20 minutes. Then, serve and enjoy!
Notes

Every dollar store is different, and not all of them may carry these ingredients. If you cannot find canned pumpkin, try using tomato sauce from a jar instead. The purpose of the soy milk is to thin out the pumpkin for the sauce, and to provide flavor. If you use tomato sauce, you may not need to use soy milk or any other liquid to thin it out. Water, broth or milk can be used instead of the soy milk here as well. If your local dollar store does not carry frozen food, feel free to substitute in canned vegetables if desired.
