Beefy Thai Casserole

Filled to the brim with spice and flavor, this Asian cooking recipe is a hearty casserole you will not soon forget. This Asian cuisine recipe is so good, you might never make another casserole again.

Cooking Time: 1 hr 30 min

Ingredients
  • 2 teaspoons light oil
  • 1 pound lean beef leg or another type of lean tough meat
  • 1 large onion, chopped
  • 2 teaspoons fresh ginger, grated
  • 1 teaspoon chilli, minced
  • 1 teaspoon garam masala or curry powder
  • 1/2 can low sodium beef consomme
  • 1 3/4 cups water
  • 3/4 cup dried coconut, chopped very fine
Instructions
  1. Heat the oil in a frying pan, then cube and brown the beef over a high heat. Place on casserole dish.
     
  2. Add onion, ginger and chilli to the pan, cook 3 - 4 minutes.
     
  3. Combine garam masala, consomme, water and coconut.
     
  4. Add to the onion mixture. Bring to the boil, stirring constantly, then pour over the beef. Cover the casserole.
     
  5. Cook at 325 degrees F for 1 1/2 hours or until beef is tender. Serve with brown rice.
