Sour Cream Cinnamon Coffee Cake

Did you know that when you make coffee cake with sour cream, you end up with a super moist coffee cake? It's true, as this easy coffee recipe goes to show.

Cooking Time: 1 hr 10 min

Ingredients
  • 1 cup butter substitute suitable for baking, softened
  • 2 3/4 cups sugar substitute suitable for baking
  • 2 teaspoons vanilla
  • 4 eggs, or equivalent egg substitute
  • 3 cups white whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups fat free sour cream
  • 2 tablespoons cinnamon
  • 1/2 cup walnuts, chopped
Instructions
  1. Cream butter substitute and 2 cups sugar, add vanilla. Adding a little egg at a time, beat well after each addition.
     
  2. Combine flour, baking powder, baking soda and salt. Add alternately with sour cream, beating well after each addition to keep batter smooth.
     
  3. Spoon 1/3 of batter into greased tube pan. Combine 3/4 cup sugar substitute, cinnamon and nuts; sprinkle 1/3 over batter, repeat twice.
     
  4. Bake at 350 degrees F for 70 minutes or until cake test done.
     
  5. Cool 10 minutes and then remove from pan to cool completely.
