No Cook Strawberry Shortcake

Just about everyone can enjoy this healthy dessert recipe for No Cook Strawberry Shortcake as it is gluten free, dairy free and vegan. Still, this may be one of the easiest and tastiest no bake dessert recipes out there for cake.

Ingredients
  • SHORTCAKE:
  • 1 cup almonds, ground
  • 1/4 cup honey
  • 1 dash salt
  • 1 tablespoon coconut oil (optional)
  • 1/2 cup strawberries, sliced
  • 1 tablespoon coconut crystals
  • CREAM:
  • 1 cup cashews, soaked for 2 hours
  • 3 tablespoons honey
  • 1 dash vanilla extract
  • 1/4 cup water, coconut water or almond milk
  • Juice of 1/2 lemon (optional)
  • 1 tablespoon coconut oil (optional)
Instructions
  1. Ground the almonds in a food processor until it becomes a fine meal. You may also use the almond pulp leftover from making almond milk.
     
  2. Add in the sweetener, salt and oil if desired. Press onto a cutting board. Cut with wineglass into circles. Top each circle with sliced strawberries dipped in coconut crystals.
  3. Dollop with cashew cream. To make the cream, blend together the soaked cashews, honey, vanilla, liquid and optional add-ins if desired.
