Hawaiian Tropics Coffee Cake

Aloha! You can't have too much fun in the sun without enjoying an amazing Hawaiian coffee cake first. It is so good, I promise you'll be eating it after sunset too.

Cooking Time: 45 min

Ingredients
  • 3/4 cup butter substitute
  • 3/4 cup light brown sugar
  • 3/4 cup granulated sugar substitute
  • 6 egg whites
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 1 ounce Hawaiian coffee liqueur (or any coffee liqueur)
  • 2 ounces carob chips
  • 3/4 cup skim milk
  • 3 1/2 cups flour
  • 3 teaspoons baking powder
  • 1/2 cup coconut, shredded
Instructions
  1. Preheat oven 350 degrees F.
     
  2. Cream together butter substitute and sugar substitutes.
     
  3. Beat in egg whites.
     
  4. Add salt, vanilla, baking soda, coffee liquer, and carob chips.
     
  5. Add in skim milk and then flour, beating alternately. Beat for three minutes.
     
  6. Add baking powder. Beat 30 seconds.
     
  7. Add coconut.
     
  8. Bake at 350 degrees F for 45 minutes.  You can also bake 30 minutes for regular layer cake. Makes a 9x13 cake.

Icing

  • 3 tablespoons butter substitute (softened)
     
  • 2 cups powdered sugar substitute (add more if too soft)
     
  • 1 ounce rum or coffee liqueur
     
  • 1-1/2 ounces reduced fat Cool Whip
     
  1. Blend and beat for three minutes.
     
  2. Spread icing onto cake.
