Friendship Coffee Cake

Show your friend just how much you value them by breaking off a piece of this easy coffee cake recipe. This is the best coffee cake because it fills stomachs and renews friendships.

Cooking Time: 40 min

Ingredients
  • 1 cup skim milk, scalded
  • 1/4 cup sugar
  • 1 package cake yeast
  • 4 cups white whole wheat flour
  • 1/2 cup butter substitute, melted
  • 1 teaspoon cinnamon
  • 3 teaspoons butter substitute
  • 1/2 teaspoon salt
  • 1/4 cup lukewarm water
  • 2 eggs, or equivalent egg substitute
  • 1 cup sugar substitute
  • 3/4 cup nuts, chopped
Instructions
  1. In a large mixing bowl, combine milk and sugar; set aside to cool.
     
  2. Dissolve yeast in lukewarm water. Add to cooled milk mixture.
     
  3. Add 1 cup of the flour, beat well, add eggs, beat well. Mix in remaining flour.
     
  4. Turn out on lightly floured board; cover and let rest 5 minutes. Knead until smooth (when dough leaves your fingers).
     
  5. Cover and let rise until doubled. Punch down.
     
  6. Break off small pieces of dough and shape into size of golf balls. Dip in melted butter substitute, then in mixture of sugar substitute and cinnamon. Sprinkle some of the chopped nuts in bottom of buttered angel food pan.
     
  7. Arrange balls in pan and sprinkle more nuts between layers. Sprinkle any remaining melted butter substitute and cinnamon mixture on top. Cover and let rise 1 hour or until doubled.
     
  8. Bake at 350 degrees F for 35-40 minutes. Let stand 10 minutes, then turn out on a serving dish.
     
  9. Pull apart to serve as a sign of friendship (do not cut).
