European Coffee Cake

Thinking about flying to Europe this year? Well, you conveniently don't have to because Europe is coming to you with this delicious coffee cake recipe.

Cooking Time: 30 min

Ingredients
  • 6 ounces butter substitute
  • 6 ounces caster sugar substitute
  • 6 ounces self-rising flour
  • 1 pinch salt
  • 3 eggs or egg substitute
  • 1/2 pint strong dark coffee
  • sugar substitute, to taste
  • rum or brandy, to taste
  • 1/2 pint reduced fat Cool Whip
  • almonds, flaked & toasted
Instructions
  1. Preheat oven to 375 degrees F.
     
  2. Cream butter substitute, add sugar substitute, cream together until light and fluffy.  Add the egg substitute, beat together thoroughly.
     
  3. Sieve flour and salt into bowl.  Add the creamed mixture, folding in gently.
     
  4. Put into a greased ring mould and bake at 375 degrees F (Gas Mark 5 or 190C) for 25-30 minutes. Turn out and allow to cool.
     
  5. To the coffee, add sugar subtitute and rum or brandy to taste.
     
  6. Replace cake in ring mould, pour over coffee, and leave to soak overnight.
     
  7. Turn out and decorate with Cool Whip and nuts.
