Cinnamon Banana Walnut Cake

Cake can be healthy too! This Cinnamon Banana Walnut Cake has no butter so you don't even have to feel guilty.

Serves: 6

Preparation Time: 20 min

Cooking Time: 20 min

Ingredients
  • 3 cups unbleached flour
  • 1 cup raw sugar
  • 1 tablespoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ground dry ginger
  • 1/4 teaspoon nutmeg
  • 1 1/2 cups banana puree (about 3 medium bananas)
  • 1 tablespoon vanilla
  • 4 tablespoons canola oil
  • 1 cup plus 2 tbsp. water
  • 1/2 cup chopped walnuts
Instructions
  1. In a large bowl, sift together flour, sugar, baking soda, salt, cinnamon, ground ginger, and nutmeg.
     
  2.  In a blender, combine banana puree, vanilla, canola oil, water, and blend well.
     
  3. Whisk liquid mixture into the dry ingredients and combine thoroughly. Pour batter into greased 9" x 13" pan and sprinkle chopped walnuts over the top.
     
  4. Bake at 350 degrees F for 20 to 25 minutes or until a toothpick comes out clean. Allow to cool before cutting.
