Zucchini Chocolate Bread

Cooking Time: 1 hr

Ingredients
  • 1/2 cup margarine
  • 1/2 cup light vegetable oil
  • 1 3/4 cups sugar, or equivalent sugar substitute suitable for baking
  • 1 teaspoon vanilla extract
  • 1/2 cup skim milk, with 1/2 tablespoon lemon juice stirred in
  • 2 eggs, or equivalent egg substitute
  • 2 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 4 tablespoons unsweetened cocoa powder
  • 2 cups zucchini, shredded
  • 1/4 cup dark chocolate chips (optional)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
Instructions
  1. Preheat oven to 325 degrees F.
     
  2. Thoroughly mix together the margarine, oil, sugar substitute, vanilla, skim milk-lemon juice mixture and eggs.
     
  3. Add whole wheat flour, baking soda, cinnamon, cloves and cocoa; mix well. Fold in the shredded zucchini.
     
  4. Put batter into two loaf pans sprayed with cooking spray.
     
  5. Sprinkle 1/4 cup dark chocalate chips on top of each loaf before baking.
     
  6. Bake for 1 hour, or until a toothpick comes out clean.
