Vintage Biscuits and Gravy

Most healthy eating plans will tell you that typical Southern biscuits and gravy are a no-no. Lucky for you, this Vintage Biscuits and Gravy recipe will show you how to make a comfort food classic better for you. Serve this Southern food delight for breakfast or as a side dish.

Ingredients
  • BISCUITS:
  • 2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 tablespoons virgin coconut oil
  • 1 cup skim milk
  • SAUSAGE GRAVY:
  • 1 pound turkey sausage
  • 2 cups skim milk
  • 2 1/2 tablespoons cornstarch
  • 1/4 cup cold water
  • Salt and black pepper, to taste
Instructions

To make the biscuits:

  1. First sift together the whole wheat flour, baking powder, and salt. Rub the solid coconut oil into this dry mixture.
     
  2. Then, add the milk and lightly mix until everything is thoroughly combined. Do not knead. Roll out  to 1 to 2 inches thick, cut into biscuits.
     
  3. Bake at 450 degrees F for about 10 minutes.

To make the sausage gravy:

  1. First, crumble sausage in a large pan and brown until all pink is gone. Pour off any fat and out back on fire.
     
  2. Add milk, heat gently until nearly boiling. Mix cornstarch with water.
     
  3. When the milk and sausage mixture is hot, blend in the cornstarch and mix well. Stirring constantly, bring to a boil for one minute.
     
  4. Reduce heat, salt and pepper to taste and pour over fresh biscuits.
