Booyah Chicken

After your first bite of this healthy chicken recipe for Booyah Chicken, you're sure to yell in excitement. With chicken, beef, pork and beans, this recipe is a protein lover's delight.

Cooking Time: 4 hr 30 min

Ingredients
  • 5 pounds stewing chicken, cut up with excess skin and fat removed
  • 1 1/2 pounds extra lean beef stew meat
  • 1/4 pound extra lean pork, cubed
  • 1/2 pound dried Navy beans, soaked overnight
  • 1/2 pound split green peas
  • 2 cups canned whole tomatoes
  • 4 cups carrots, diced
  • 2 1/2 cups onions, diced
  • 3 cups celery, diced
  • 1/2 lemon, peeled and cut into pieces
  • 8 cups potatoes, diced
  • 4 cups cabbage, shredded
  • 4 tablespoons butter substitute
  • Salt and pepper, to taste
Instructions
  1. Put cut-up chicken, beef and pork in a large pot. Cover with cold water. Slowly bring to a boil. Skim, then simmer one hour.
     
  2. Add drained Navy beans, green peas, tomatoes, carrots, onions, celery and lemon. Cook about three hours.
     
  3. Add potatoes, cabbage, butter, salt and pepper. Simmer 30 minutes.
Notes

During cooking, it is necessary to add water to keep meats and vegetables covered.
