Healthy Peanut Butter Brownies

These healthy peanut butter brownies and decadent and delicious! This easy dessert recipe is great for the entire family.

Yields: 16

Cooking Time: 25 min

Ingredients
  • 3 ounces light cream cheese
  • 1/3 cup creamy or chunky peanut butter
  • 1/3 cup sugar substitute
  • 8 egg whites, divided
  • 1 package (1 lb. 6.5 oz.) brownie mix with chocolate syrup pouch
  • 1/3 cup water
  • 1/3 cup vegetable oil
Instructions
  1. Preheat oven to 350 degrees F. Spray 2-quart square casserole with nonstick cooking spray.
     
  2. In a small bowl, with electric mixer, combine peanut butter, cream cheese, sugar and 2 egg whites until smooth; set peanut butter mixture aside.
     
  3. In a medium bowl, combine brownie mix, contents of chocolate syrup pouch, remaining 3 eggs, water and oil until well blended. Reserve 2 tablespoons brownie batter.
     
  4. Pour remaining batter into casserole and microwave on High for 5-6 min., or until top is still wet in center but sides are set. Spread peanut butter mixture from small bowl evenly over hot brownie (mixture will begin to melt).
     
  5. With a fork, carefully swirl reserved 2 tablespoons of remaining brownie batter into peanut butter mixture Be careful not to disturb set brownie underneath.
     
  6. Bakefor 15-20 minutes, or until top is set and just browned at edges.
     
  7. Remove to a wire rack to cool completely before cutting.
