Healthy Peanut Butter Brownies

These healthy peanut butter brownies and decadent and delicious! This easy dessert recipe is great for the entire family.

Yields: 16

Cooking Time: 25 min

  • 3 ounces light cream cheese
  • 1/3 cup creamy or chunky peanut butter
  • 1/3 cup sugar substitute
  • 8 egg whites, divided
  • 1 package (1 lb. 6.5 oz.) brownie mix with chocolate syrup pouch
  • 1/3 cup water
  • 1/3 cup vegetable oil
  1. Preheat oven to 350 degrees F. Spray 2-quart square casserole with nonstick cooking spray.
  2. In a small bowl, with electric mixer, combine peanut butter, cream cheese, sugar and 2 egg whites until smooth; set peanut butter mixture aside.
  3. In a medium bowl, combine brownie mix, contents of chocolate syrup pouch, remaining 3 eggs, water and oil until well blended. Reserve 2 tablespoons brownie batter.
  4. Pour remaining batter into casserole and microwave on High for 5-6 min., or until top is still wet in center but sides are set. Spread peanut butter mixture from small bowl evenly over hot brownie (mixture will begin to melt).
  5. With a fork, carefully swirl reserved 2 tablespoons of remaining brownie batter into peanut butter mixture Be careful not to disturb set brownie underneath.
  6. Bakefor 15-20 minutes, or until top is set and just browned at edges.
  7. Remove to a wire rack to cool completely before cutting.

while reading thru this recipe, you say to use 2 egg whites in step 2, and set it aside. you say to use 3 remaining eggs in step 3, reserve 2TBSP brownie batter. but you DO NOT SAY when and where to put the rest of egg whites in recipe. your math of 2 egg whites and 3 eggs DO NOT EQUAL 8 egg whites at all. you need to either correct the amount of egg whites for the recipe, or tell when and where to put the last 3 egg whites in the recipe. You need to make sure ALL OF THE INGREDIENTS OF RECIPE is used when you type up the directions of the recipe, NOT ONLY PART OF AN INGREDIENT THAT IS DIVIDED MORE THAN ONCE BUT USE ALL OF THAT INGREDIENT IN RECIPE. I have NOT made this recipe yet so I can NOT rate it.

Yes, KATHYO and I picked up on the same thing. 2 egg whites, . . "remaining 3 eggs" does not add up to "8 egg whites".

I'm confused, you use two egg whites in step 2 and three eggs in step 3 do not equal eight egg whites in the ingredients???

Hi ewersjo - This recipe is simply lighter than other peanut butter brownies you'll find, especially since it uses light cream cheese instead of regular. Also, there are now a variety of lighter brownie mixes on the market, including low sugar and organic varieties. I hope this helps! -The editors of FaveHealthyRecipes

Not real sure how you can say this is a healthy recipe when you use a brownie mix with Chocolate syrup pouch. Am I missing something????

i was prepared to make this recipe when i read it over and i am confused you say to use a small bowl to mix and set aside but you don't say when to use it when you say to spread the peanut butter mixture what mixture do you mean it sounds delicious and i don't want to spoil it because of not understanding the directions please help me thank you elsie mcnamee
