This is one of the best healthy dessert recipes because it shows you just how easy it is to make homemade brownies. Make a batch of this Coconut Fudge Brownies recipe from Adele of Vegie Head (www.vegiehead.com) to try one of the yummiest chocolate brownies around.

Makes: 12 squares

Ingredients
  • 3/4 cup brown rice flour
  • 1/2 cup raw cacao
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • 1/2 cup coconut cream
  • 1/2 cup organic coconut sugar
  • 1/4 cup safflower oil
  • 1/2 cup vegan chocolate chips
Instructions
  1. Sift the brown rice flour, baking powder, cacao and salt into a bowl.
     
  2. Whisk the coconut cream, sugar, and oil together until there are no lumps.
     
  3. Pour the wet mix into the dry, and fold gently. Do not over mix!
     
  4. Add the chocolate chips, and pour into a greased brownie pan. Choose a small one, as this only makes a small amount.
     
  5. Bake at 180 degrees C (about 355 degrees F) for 15 minutes, check with a skewer and bake for a further 5 minutes if you want them drier.
     
  6. Allow to cool for 15 minutes before you slice it.
Notes

This mixture can be doubled, just bake for 20-25 minutes and check on it after that.
