Jarlsberg Cheese and Sausage Breakfast Muffin

Start your day with some hand-held deliciousness and make yourself this Jarlsberg Cheese and Sausage Breakfast Muffin. This is definitely one of the tastiest breakfast sandwich ideas around, especially cool considering it's a healthy breakfast sandwich.

Serves: 4

Cooking Time: 8 min

Ingredients
  • 8 light sausage or soy breakfast links
  • 4 eggs
  • Black pepper
  • 2 ounces Jarlsberg Lite cheese, grated (4 heaping tablespoons)
  • 4 English muffins, fork split
Instructions
  1. Cut breakfast links into 1/2-inch pieces and divide between 4 2x4-inch glass or ceramic ramekins (or ovenproof baking cups). Place in microwave oven, well spaced and loosely covered with waxed paper. Cook on high 3 minutes.

  2. Carefully remove ramekins from oven. Place 1 heaping tablespoon cheese in each, covering sausage. Make shallow well in center of each, break an egg into a saucer and slide into ramekin. Gently pierce each yolk twice with knife tip. Dust with pepper to taste.
     
  3. Arrange in microwave, well spaced and loosely covered with waxed paper. Cook 2 to 4 minutes until yolks are set, soft or firm to taste. Serve, OR cover and refrigerate until needed.
     
  4. Toast muffins. Before serving, heat egg mixture in microwave 30 seconds to 1 minute, until hot. Loosen edges and slide on English muffins making sandwiches.
