Old Fashioned Sweet Corn Bread

This fresh corn bread recipe is made the old fashioned way, though with some modern substitutions to make things a bit healthier. This recipe is so tasty that you'll be sure to add it to the top of your list of favorites after the first bite!

Serves: 9

Cooking Time: 30 min

Ingredients
  • 1 cup all-purpose wheat flour
  • 1 cup corn flour
  • 1/4 cup sugar substitute
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 1 cup non-fat sour cream
  • 1/3 cup fat-free milk
  • 1/4 cup butter substitue or margarine, softened
Instructions
  1. Preheat oven to 400 degrees F.
     
  2. In a bowl, combine flours, sugar substitute, baking powder, and salt.
     
  3. In another bowl, combine egg, non-fat sour cream, fat-free milk, and buttersubstitute.
     
  4. Stir into dry ingredients just until moistened.
     
  5. Pour into 8-inch square baking pan, greased with non-fat cooking spray.
     
  6. Bake at 400 degrees F for 20 to 30 minutes or until a toothpick comes out clean.
     
  7. Serve warm.
