Low Fat Stay Fresh Banana Bread

This is a trimmed down version of banana bread so you'll be guilt free when indulging in this delicious dish. Low Fat Stay Fresh Banana Bread cuts calories without losing any taste and stays fresh longer! Try this easy banana bread recipe for a sweet treat.

Cooking Time: 40 min

Ingredients
  • 1 1/4 cups white whole wheat flour
  • 1 cup sugar substitute suitable for baking
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup solid vegetable shortening
  • 2 ripe medium bananas
  • 1/2 cup egg substitute suitable for baking
Instructions
  1. Sift dry ingredients into bowl.
     
  2. In blender, mix remaining ingredients.
     
  3. Add to dry ingredients and mix so that dry ingredients are moistened.
     
  4. Spoon into lightly buttered and floured 9" square pan and bake in moderate oven, 350 degrees F, 35 to 40 minutes.
     
  5. Remove from oven; let stand 5 min.
     
  6. Loosen edges with spatula and turn out onto cake ralk.
     
  7. Covered with waxed paper.
     
  8. Cool to room temperature.
     
  9. Cut into squares.
