Healthy Banana Bread

You might be wondering if healthy banana bread even exists. Well, one word - yes! This easy banana bread recipe is low in fat and delicious! Dig in!

Cooking Time: 1 hr 30 min

Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 6 fresh ripe bananas, mashed
  • 1 cup sugar substitute
  • 1/2 cup applesauce, unsweetened
  • 3 large egg whites
  • 1 teaspoon vanilla extract
  • 1/2 cup walnuts, finely chopped
Instructions
  1. Preheat the oven to 350 degrees F.
     
  2. Spray a pan with nonstick cooking spray.
     
  3. In a medium bowl, whisk together flours, baking powder, baking soda, cinnamon and salt to combine.
     
  4. In another bowl, beat the mashed bananas, sugar substitute, applesauce, egg whites, and vanilla until well mixed. Add the dry ingredients and whisk until smooth.
     
  5. Stir in the walnuts.
     
  6. Transfer the batter to the loaf pan and smooth the top.
     
  7. Bake for 50 minutes to 1 hour, or until the top is browned and the sides of the bread pull away from the sides of the pan. Remove from the oven and let stand for 10 minutes on baking rack. Invert and unmold onto the rack, turn right side up, and let cool.
