Cheaters' Banana Bread

The reason Adele of Vegie Head (www.vegiehead.com) calls this recipe Cheaters' Banana Bread is because there's no baking needed here. Instead, think of this healthy breakfast recipe as French toast made with bananas instead of eggs.

Serves: 2

Cooking Time: 8 min

Ingredients
  • 2 slices of good quality bread
  • 2 bananas
  • 1/2 cup rice milk
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 date, pitted
Instructions
  1. Heat a good quality non-stick pan.
     
  2. Blend the bananas, rice milk and spices until smooth.
     
  3. Dip the bread in VERY quickly on each side.
     
  4. Fry immediately (use a little oil if your pan is sticky) for about 4 minutes on each side.
     
  5. Serve with fresh fruit.
