Anisi's Blueberry Corn Bread

Anisi takes her special blueberry corn bread recipe from the Swiss mountains where she was born. Her mother taught her the secret of picking ripe blueberries for her fresh corn bread recipe. Try a version of her secret recipe now!

Ingredients
  • 1 cup wheat flour
  • 1 cup fresh blueberries
  • 3/4 cup corn meal
  • 1 egg
  • 3 tablespoons sugar substitute
  • 2/3 cup fat free milk
  • 1 teaspoon baking powder
  • 1/3 cup light salad oil
  • 3/4 teaspoon salt
Instructions
  1. Spray 8 x 8 inch baking pan with non-fat cooking spray.
     
  2. Preheat oven to 425 degrees F.
     
  3. In bowl mix flour, cornmeal, sugar, baking powder and salt.
     
  4. Stir in fresh blueberries.
     
  5. In small bowl beat egg, add milk and oil.  Mix.
     
  6. Pour all at once into flour mixture. Stir just until dry ingredients are evenly moistened. Pour batter into baking pan.
     
  7. Bake for 25 minutes or until golden brown.
