Cranberry Orange Nut Biscotti

Yields: 10 biscotti

Cooking Time: 30 min

Ingredients
  • 1/2 cup unbleached all purpose flour
  • 1/2 cup whole wheat pastry flour
  • 1/4 cup NuNaturals NuStevia Sweetener™ Baking blend, or their MoreFiber™ Blend
  • 1 teaspoon baking powder
  • 1 tablespoon Earth Balance™ margarine
  • 1 "Flax Egg," (1 tablespoon Ground flax mixed with 3 tablespoons water)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon orange extract
  • 2 tablespoons orange juice
  • 2 tablespoons chopped almonds
  • 2 tablespoons dried cranberries
Instructions
  1. Preheat oven to 350 degrees F.
     
  2. Combine dry ingredients. Cut in the margarine until mixture has a coarse texture.
     
  3. Stir in the flax egg, orange juice, and extracts. Fold in almonds and cranberries.
     
  4. Shape dough into a 9-inch by 2-inch log. Coat a baking sheet with cooking spray and place log on sheet.
     
  5. Bake for 20 minutes or until lightly browned.
     
  6. Cool log for 10 minutes and then cut into ½ inch slices using a serrated knive.
     
  7. Place the slices back on the cookie sheet and bake for 10 minutes.
     
  8. Turn slices over and return to oven for additional 10 minutes or until dry and crisp.
     
  9. Let cool completely.
