Good For You Nachos

Indulge in your favorite finger foods without any guilt! These Good For You Nachos from Dorothy Delaney lack the cheese, ground beef and other heavy ingredients found in your typical Mexican nachos recipe. However, this easy nachos recipe is definitely not lacking in flavor!

Ingredients
  • Dorothy's Imitation Doritos (see below for recipe), or your favorite tortilla chips
  • MACADAMIA SOUR CREAM:
  • 1 cup macadamia nuts
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • NACHO CHEESY SAUCE:
  • 1 cup water
  • 2/3 cup cashews
  • 1 orange or yellow bell pepper
  • 1/2 cup nutritional yeast (optional)
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder
  • WALNUT "MEAT":
  • 1/2 cup walnuts, ground
  • Juice of 1 lime
  • 1 garlic clove
  • 1 teaspoon olive oil
  • 2 teaspoons cumin
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. To make the Macadamia Sour Cream, blend the macadamia nuts and water in blender until creamy. Then add lemon juice and let sit on counter with a paper towel over, for 8 hours.
     
  2. To make the nacho cheesy sauce, combine the water, cashews, bell pepper, nutritional yeast, lemon juice, salt and onion powder in a blender and blend until thoroughly mixed.
     
  3. To make the walnut "meat," mix together by hand the ground walnuts, lime juice, garlic, olive oil, cumin, cayenne pepper, salt and pepper.
     
  4. To assemble the nachos, place a layer of chips on the bottom of a plate. Top the chips with the macadamia sour cream, nacho cheesy sauce, walnut "meat" and any other of your favorite nacho toppings.
Notes

Use Dorothy's recipe for Imitation Doritos as the chips base for this recipe.
