Applesauce and Oatmeal Cookies

These Applesauce and Oatmeal Cookies are so light and healthy that you can eat them as granola bars for breakfast. Crumble them in your yogurt or heat them as an ice cream topping for dessert.

Notes


  • 5oz flour = 1 cup

  • 5oz oats = 1 1/2 cup

  • 3oz sugar = 1/2 cup

  • 5oz applesauce = 1/2 cup

Ingredients

  • 5 ounces wholemeal (wholewheat) flour
  • 5 ounces porridge oats
  • 3 ounces sugar substitute suitable for baking
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 5 ounces applesauce
  • water to mix

Instructions

  1. Mix the dry ingredients together.
     
  2. Mix in the applesauce, then add enough water to make a sticky but not too runny batter. Do this as quickly as possible, then place spoonfuls of the mixture on a lightly-greased baking tray, flattening into cookie shapes - they will rise and expand sideways slightly.
     
  3. Bake at 325F degrees  (Gas 3, 160 C) for about 30 minutes until cooked but not crisp.

The weight watchers points are 2 points per cookie...if you can stretch them into 24 instead of 12 per batch then you can get them to be 1 point each!!! I just figured the points out on the offical WW site 12/10
