Low Fat Ground Turkey Meatloaf

Low-Fat Ground Turkey Meatloaf is a great alternative to your typical greasy beef meatloaf. Turkey is a leaner meat, and this recipe uses mustard and chile powder as flavoring. You'll have all of the flavor with less of the fat.

Ingredients

  • 1 pound ground turkey
  • 6 tablespoons whole-wheat bread crumbs
  • 8 ounces tomato sauce
  • 2 tablespoons dried onion flakes
  • 1 tablespoon prepared mustard
  • 1/2 teaspoon chile powder

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. In large bowl mix all of the above.
     
  3. Pat into a loaf pan and bake for about 1 hour or until done. You can also use the microwave. But pat the meat mixture into a bundt type pan.
     
  4. I then use the temperture probe and cook until the loaf is at 190 degrees.
     
  5. About half way through I rotate the meat and move the probe over to the undercook part of the meatloaf. You may not have to do this--I have a very old microwave (11 years)

Why did you mention your microwave? The instructions are to set the oven at 350, but not for the time it takes and how are you using a meat thermometer in a microwave?

I wouldn't make this in a microwave. Everyone has an oven, don't they? This looks like a pretty good low-fat meatloaf (and I'll definately try it), but I'll use 'real' diced onion, a clove of minced garlic, and some finely diced red or green Bell Pepper to the mixture. I'll also add some (dry) parmesan chesse and a bit of grated carrot. The carrot gives it a nice little bit of nice sweetness. My family loves meatloaf, and I always try to make it a 'healthy version" of the traditiomal meatloaf. This one sounds good to me (with my own adjustments). I'll be making it tomorrow, as I have to thaw out my ground turkey. I'm sure it will be delicious! BTW, add a little salt & pepper. (Who writes these recipes, anyways?)
