A Pear fect Thanksgiving

Ingredients

  • 1/2 cup brandy (optional)
  • 7 almost-ripe pears, peeled, cored and sliced thinly
  • 2 cups skim milk
  • 1 cup evaporated skim milk
  • 1 cup sugar substitute
  • 2 teaspoons vanilla extract
  • 1/2 cup white whole wheat flour
  • 5 large cage-free eggs
  • Confectioners' sugar, for dusting (optional)

Instructions

  1. Preheat oven to 375 degrees F degrees. Generously spray a baking dish 12 inches in diameter and 2 inches deep with cooking spray. You can also use a 9 x 13-inch baking dish.
     
  2. Pour liqueur over bottom of prepared dish. Arrange pear slices in dish and brush with additional liqueur, if desired.
     
  3. Combine skim milk, evaporated skim milk, sugar substitute and vanilla in a medium saucepan. Bring to a boil over medium-high heat, stirring to dissolve sugar.
     
  4. Reduce heat to medium and boil for 2 to 3 minutes. Remove from heat and set aside.
     
  5. Place flour in a large mixing bowl, and using an electric mixer, beat in eggs one at a time, scraping the sides of the bowl often.
     
  6. Gradually beat in warm milk mixture. Pour mixture over the pears.
     
  7. Bake everything until firm to the touch in the center and lightly golden on top, about 1 to 1 1/2 hours.
     
  8. Let cool several hours and then refrigerate if made ahead. Serve by cutting into wedges or squares, and dust each with confectioners' sugar.
