Pumpkin Spice Cake in a Jar

Did you even know there were such things as cake in a jar recipes? This recipe for Pumpkin Spice Cake in a Jar is not only delicious, but it also makes for a great holiday gift. This healthy baking idea is the sure way to impress others.

Ingredients

  • 1 cup raisins
  • 1 cup walnuts
  • 2 cups white whole wheat flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cloves
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 4 eggs, or equivalent egg substitute
  • 2 cups granulated sugar, or equivalent sugar substitute suitable for baking
  • 1 cup light vegetable oil
  • 16 ounces canned pumpkin

Instructions

  1. Preheat oven to 325 degrees F.
     
  2. Sterilize 8 12-ounce Ball Quilted Crystal Canning Jars (14400-81400), lids and rings by boiling them for 10 minutes.  Leave the lids and rings in the hot water until you're ready to use them. Remove jars and allow the jars to air-dry and cool. Using a pastry brush, brush the inside of the cooled jars with shortening and set aside.
     
  3. Coarsely chop the raisins and walnuts. Set aside.
     
  4. Sift together the flour, baking soda, baking powder, salt, cloves, cinnamon and ginger in a large bowl. Add raisins and walnuts, and toss to lightly combine.
     
  5. In another large bowl, beat eggs at high speed until thick and yellow, about 2 to 3 minutes. Gradually beat in the sugar until thick and light.
     
  6. At low speed, blend  in the oil and pumpkin. Gradually stir in the flour mixture until well blended.
     
  7. Divide among the 8 canning jars. Each jar should be slightly less than half-full. Wipe the sides of the jar off both on the inside and the outside in case you slop or it'll burn. Place jars onto a cookie sheet just in case they tip over.
     
  8. Bake for 35 to 40 minutes, or until a pick inserted into the center of each jar comes out clean.
     
  9. Have your lids and rings ready. Take one jar at a time from the ove, and place a lid and ring on and screw down tightly.  Use heavy-duty oven mitts, as the jars will be extremely hot. Place the jars onto your counter top too cool. They are sealed once you hear a "plinking sound."
