15 Minute Muffins with Chocolate Chips and Peanut Butter

Ingredients

  • 2 cups white whole wheat flour
  • 1 cup miniature dark chocolate chips
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 pinch salt
  • 1 1/2 cup sugar substitute
  • 1 cup reduced fat peanut butter
  • 1/4 cup margarine, melted
  • 4 egg whites
  • 1 cup skim milk
  • 1 teaspoon vanilla extract
  • 2 teaspoons water, warm

Instructions

  1. Preheat oven to 400 degrees F. Paper-line 24 muffin cups.
     
  2. In large bowl, stir together flour, dark chocolate chips, baking powder, baking soda and salt; set aside.
     
  3. Combine 1 cup sugar substitute, reduced fat peanut butter, margarine and egg whites.
     
  4. Add skim milk and vanilla; stir until well blended. Add all at once to flour mixture; stir until just moistened.
     
  5. Fill muffin cups about 3/4 full. Bake for 15 minutes or until lightly browned; let cool for 5 minutes.
     
  6. Meanwhile, prepare sugar glaze. Stir together remaining sugar substitue with 3 teaspoons of warm water; stir until smooth and of desired consistency.
     
  7. Drizzle over cupcakes. Serve warm or cool.
