Steven's Chicken and Apple with Curry Sauce

Steven loves apples in everything he makes and his curry chicken is no exception. This easy curry chicken recipe is delicious and good for you too! Steven has always been a health conscious guy and he loves the addition of fresh fruit to his curry. Yum!

Ingredients

  • 2 tablespoons butter substitute
  • 2 tablespoons wheat flour
  • 2 cups half & half
  • 2 low sodium chicken bouillon cubes
  • 1/2 cup cream of coconut or 1/2 cup coconut milk
  • Curry powder to taste (approximately 1 teaspoon)
  • 1 whole skinless chicken breast
  • 1/4 cup fresh apple slices
  • 1/4 cup onions, chopped
  • 1/4 cup mushrooms, chopped
  • 4 or 5 broccoli florets

Instructions

  1. Preheat oven to 375 degrees F.
     
  2. Prepare the roux by melting the butter substitute and blending it with the wheat flour over medium heat.  Stir constantly and add half & half, bouillon cubes, and the coconut milk. Add curry powder and continue stirring until boiling occurs and the mixture thickens. Then set aside.
     
  3. Place skinless chicken breast in a small casserole dish.
     
  4. Fill the breast with the fresh apples, onions, mushrooms, and broccoli. Fold two halves of chicken breast together.
     
  5. Cover with your curry sauce and garnish.
     
  6. Bake for 15 to 20 minutes at 375 degrees F.

Help! What is half and half? We don't have this in South Africa - is it a milk substitute?

That is a lot of sauce for one chicken breast and high in calories also
