Ingredients

  • 5 pounds stewing chicken, cut up with excess skin and fat removed
  • 1 1/2 pound extra lean beef stew meat
  • 1/4 pound extra lean pork, cubed
  • 1/2 pound dried Navy beans, soaked overnight
  • 1/2 pound split green peas
  • 2 cups canned whole tomatoes
  • 4 cups carrots, diced
  • 2 1/2 cups onions, diced
  • 3 cups celery, diced
  • 1/2 lemon, peeled and cut into pieces
  • 8 cups potatoes, diced
  • 4 cups cabbage, shredded
  • 4 tablespoons butter substitute
  • Salt and pepper, to taste

Instructions

  1. Put cut-up chicken, beef and pork in a large pot. Cover with cold water. Slowly bring to a boil. Skim, then simmer one hour.
     
  2. Add drained Navy beans, green peas, tomatoes, carrots, onions, celery and lemon. Cook about three hours.
     
  3. Add potatoes, cabbage, butter, salt and pepper. Simmer 30 minutes.

I can't legitimately rate this recipe because I have not made it yet. This meal intrigues me ... I would love to make it, but I would prefer to make it in a crock pot. I know I would need to significantly reduce the amount of water/liquid (to 1/4 or none), but would there be other recommendations for cooking/layering the meat and vegetables. Any help would be greatly appreciated.
