Lemon Crunch Banana Bread

For a unique and tangy banana bread recipe, try lemon crunch banana bread. This easy recipe packs a crunch and a great fusion of flavors with nuts, spices and lemon.

Notes

For Banana walnut or pecan bread omit almonds. Add 3/4 cup of chopped walnuts or pecans to bananas.

Ingredients

  • 1 3/4 cup white whole wheat flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon grated nutmeg
  • 1 teaspoon grated lemon peel
  • 1/4 cup ground almonds
  • 1/2 cup butter substitute suitable for baking
  • 3/4 cup sugar substitute suitable for baking
  • 1/2 cup egg substitute suitable for baking
  • 1 1/2 cup mashed banana (4 medium bananas)

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Grease 9 x 5 inch loaf pan.
     
  3. Sift flour, nutmeg, allspice, baking soda and baking powder baking powder together in bowl.
     
  4. Add lemon peel and almonds. Stir until combined then set aside.
     
  5. Beat butter substitute in large mixing bowl until soft amd creamy.
     
  6. Beat in sugar substitute until light and fluffy.
     
  7. Add egg substitute and beat until thoroughly blended.
     
  8. Beat in flour mixture alternately with bananas until mixture is well blended. Pour into prepared pan.
     
  9. Bake in center of oven for 60 to 65 minutes or until toothpick inserted in center comes out clean.
     
  10. Cool in pan on wire rack 10 minutes. Invert from pan and cool completely on rack.
